Pauline Clark departed this life Tuesday, September 8, 2015, after a hard-fought battle with cancer. She was born March 31, 1933, near Centerpoint, Arkansas, the daughter of Hollie Bryant and Agnes (Perme) Bryant. She was preceded in death by her husband, Clifford Clark, whom she married July 19, 1952; her father, Hollie Bryant; her mother, Agnes Hankins; her second husband, Cletus Clark, whom she married in May, 1996; her daughter-in-law, Jana (Combs) Clark; her half-sister, Kaye (Bryant) Bell; and her half-brother, Riley Gene Bryant.

Most of Pauline's life was spent in Newton County and she had a great love for its people, the hills, and the Buffalo River. She attended Hill Top Community Bible Church. She enjoyed painting, gardening, and cooking. She was an in-home caregiver and also worked at Tyson Foods and Mass Merchandiser.

Pauline leaves behind a large legacy of love in her children, Karen Fancher and husband Scott, Bill Clark and wife Veronica, Debbie Cook, Connie Long, Jeannie Davidson and Ruby Davidson and her husband Gene; 16 grandchildren; and 38 great-grandchildren. She is also survived by her half-brothers and sister, Leonard Bryant, Terry Bryant, Neal Bryant, Roy Lee Bryant, Hal Bryant and Paula Pate. Pauline also leaves many loving cousins and other relatives and friends from all over.

We will all miss her affection and wisdom, her music, her amazing cooking, especially the apple strudel, and her calm determination in the face of trial.



Visitation was Thursday, September 10, 2015, at Roller-Christeson Funeral Home.

Funeral service was Friday, September 11, 2015, at Roller-Christeson Funeral Home, with Bro. Jim McCollough officiating.

Pallbearers were Shannon Fancher, Jake Fancher, Brandon Clark, Dittman Cline, Ron Long, Jason Davidson, Garrett Davidson, Dustin Davidson and Sam Davidson.

Honorary pallbearers were Pauline's granddaughters and great-grandchildren.

Interment was in Plumlee Cemetery.

Traditional Slovenian Apple Strudel from Pauline Clark

Ingredients:
1 stick butter or margarine, plus 3 tbs.
Allspice (very small amount)
8-10 slices of stale bread
3 cups flour (Pauline preferred Gold Medal)
8-10 apples (prefer tart)
1 egg, beaten
1/2 pint heavy or whipping cream
1/2 tsp. salt
1 & 1/2 cups sugar
1 cup lukewarm water with 1 tbs. vinegar added
Cinnamon (liberal amount)

Take 1 stick of butter and melt in a skillet. Add the stale bread, crumbled into small pieces. Cook over medium heat until lightly browned. Set aside. Dump 3 cups of flour into large bowl creating a ''well'' and put in the egg, water with vinegar, and salt. Mix until a dough ball is formed that does not stick to your hands. Place on a floured surface and knead and throw against the surface at least 100 times or until you have worked out your frustration!! Oil the inside of your bowl and the surface of the dough. Cover with damp towel and set aside for 1 hour.

Peel apples and slice very thin. Assemble all ingredients. Cover a table with an old sheet or tablecloth. Lightly flour the surface. Place the dough in the center and roll with a rolling pin until it has been flattened. Using the flat of your hands, start reaching in under the edges of the dough and gently pulling it towards the edge of the table all the way around; the dough should stretch easily and become paper thin. It should cover the entire surface of the table. Any holes that get poked with fingers can be patched with the excess. (It will cover a 48'' round table top) Take the cream and spread it with your hand over the entire surface. Now lay each apple slice individually on the surface creating fan patterns until entire surface is covered. Then sprinkle bread crumbs over the apples; then sugar, cinnamon, and allspice. Trim the hanging off the table edges.

Pick up the sheet on one side and lift it, turning the dough over until it forms a roll. Pull the cloth towards you as the roll gets bigger and is completely rolled up. Transfer to a large baking pan and bake at 350° for 1 hour. Brush with butter.

I did not know Mrs. Pauline well, but every time I saw her, she had a smile and sweet, thoughtful words to share. The blessing of her short presence on earth will go on in the memories of all who knew and loved her. Prayers for those she loved so dearly!
